Making Personal Pizza at home


One of the best dishes a colleague of mine introduced me to, is making pizza at home. Surprisingly simple, and ridiculously delicious to make, I've been making this delicious recipe intermittently for the past few years now.
Recipe:

Pizza Dough (Trader Joe's)Half the dough
Marinara Sauce1/2 cup
Shredded Parmesan Cheese1/3 cup
Shredded Mexican 3-Cheese blend1/3 cup
Bell PepperHalf
Olive oil2 Tbsp

Instructions:
  1. First, take the dough, place it on a lightly floured sheet and let it come up to room temp.
  2. Heat up the oven to 450 F.
  3. Slowly spread out the dough with your fingers to the desired thickness.
  4. Spread the marinara sauce on the dough, and brush olive oil on the crust edge.
  5. Dice the bell pepper and spread it across the marinara.
  6. Mix the cheeses and spread it over the marinara and bell peppers.
  7. Place the sheet in the oven, and bake for 7-8 minutes.
  8. Take out and spread some hot sauces on the top if you want (I do :D).
  9. Cut, and enjoy :D (Let it rest so that you do not burn the roof of your mouth).
You can of course put your own toppings on this.

Today is the new year according to the Tamil Calendar. As a part of that, usually, my mum makes a variety of lip-smacking dishes to welcome in the new year. It's been almost 10 years since I last experienced that at home.

Yesterday, as I was chatting with her, she gave a brief description of how to make Semiya (Vermicelli) Paal (milk) Payasam (pudding).

So today, as I woke up, I decided to make the same. Even for an amateur cook like me, this dessert is incredibly simple to make, with 5 ingredients. So, without further ado, here's the recipe:


Name Quantity
Vermicelli 1 Cup
Whole Milk 2 Cup
Ghee 3 tbsp
Cardamom Pods 1/3 cup
Sugar 1/2 cup
Cashewnuts10

Instructions:
  1. Heat 1 tbsp ghee, and roast cashewnut seeds in the ghee till golden brown. Set aside.
  2. Heat the remaining ghee, and roast the vermicelli in it till golden brown.
  3. Add in the milk, bring it to a boil on medium heat, then simmer and boil for 15 minutes. Keep stirring periodically to avoid boil-over.
  4. Muddle cardamom pods with a little sugar in a mortar and pestle and add to the milk.
  5. Add in sugar. Stir in and cook for an additional 3 minutes.
  6. Top with the cashewnuts. Serve hot or cold.
This has the added benefit of leaving the house smelling like cooked ghee, which is AWESOME!!!!
